When it comes to the quality of our ingredients, we accept no compromise. . If possible, we purchase our organic cereals directly from the farmers or from the nearby mill in Merano. Since 1982, we have been grinding the grains ourselves, in our own mill.
When baking, we don’t use any additives or premixes. We take care of our sourdough according to the tradition, in the most natural way (with no additives). We also give our dough the right amount of time to fully develop its taste.
