Triticum Monococcum is the oldest among all the wheat variety. It's defined by small bearded ears and spikelets that each contain one slender grain. Considered all of its characteristic this type of wheat belongs neither to the durum wheat family nor the soft wheat family representing a unique variety then. It has high contents of carotenoids and special digestible properties so as it's also suggested for babies growth and gluten-free people. Its production is characterised by a low yield, few seeds and a long vegetative cycle, all characteristics those that had let him be put apart in favour of more profitable cereals. Recently, it has been rediscovered and appreciated because of all its good quality and nutritional values.
